Ingredients

    1 Tbsp Olive Oil
    3 Small Sweet Potatoes, chopped
    1 Medium Onion, chopped
    6 Brussels Sprouts, quartered
    3 Cloves garlic, halved
    Salt, pepper, and spices to taste

Directions

1. Heat oven to 400.

2. Prepare vegetables.

3. Rub the cut end of one halved clove of garlic across the bottom of your cooking pan.

4. Mix vegetables in pan. Add olive oil and spices and stir until spices and oil cover vegetables.

5. Cook for 20-40 minutes, until vegetables are tender.

Makes 2 servings.
