    10 large eggs
    8 oz. J.C. Potter Lite Country Sausage
    1 cup shredded cheddar cheese
    1 cup feta cheese crumbles
    1 cup mushrooms, sliced
    1/2 cup onion, chopped
    1/2 cup green pepper, chopped
    16 oz frozen spinach
    1/2 cup reduced fat sour cream


1. Preheat oven to 375 degrees. Brown sausage, onions and green peppers in a skillet. Add mushrooms once sausage is almost done.

2. While sausage is browning, thaw and drain spinach. Add sausage, vegetables and spinach to a casserole dish. Layer with feta cheese.

3. Beat eggs, add sour cream. Fold in shredded cheddar and add mixture to casserole dish.

4. Bake at 375 degrees for 35 minutes or until eggs are set.

5. Divide quiche into 6 pieces.
