Number of Servings: 4


    1 lb boneless pork chops
    1 T vegetable oil
    2/3 C orange juice
    1/4 C soy sauce
    1.5 T white sugar
    2 T water
    1 t corn starch

    flour, salt, pepper, and crushed red pepper to coat pork


1. In a bag, mix flour, salt, pepper, and red pepper flakes. Cut pork into cubes and shake in bag to coat.
2. Heat oil in skillet over med. heat. Add pork and brown. Remove from skillet and set aside.
3. Pour OJ, soy sauce, and sugar into skillet. Add shredded carrots. Boil for 2 minutes, scraping pan. Mix water and cornstarch, stir into sauce.
4. Return pork to skillet. Add almonds and stir to coat. Cook a few more minutes, until everything is heated through.

Serves 4. Good with chicken, too!
