    2 C white rice (must be leftover/ refrigerated overnight!)
    3 T vegetable oil
    1 egg
    2 T soy sauce
    .5 C peas (or other frozen vegetable)


Heat oil in a large skillet. Add rice, stir around until hot and starting to sizzle. Add frozen veggies. Push all ingredients to the perimeter of the pan and crack the egg into the center. As the egg starts to cook, stir everything together. Season with soy sauce until the color is how you want it.

**Rice MUST be leftover or this dish will come out a pile of mush!!
