    2 lbs eggplant cubed
    4 lbs butternut squash
    1 large onion chopped
    3 garlic cloves chopped
    15 oz can chick peas, drained and rinsed
    2 pints cherry tomatoes, chopped
    1 tbsp chili powder
    1 tbsp cumin
    1 cup parmesan cheese (dried)


saute onions and garlic, add veggies, simmer 45 minutes, add spices and parmesan cheese, simmer 10 minutes
