    1 cup dried black beans
    1 tbsp olive oil
    2 cups chopped onions
    1 cup chopped green or red bell peppers
    3 cloves garlic, minced
    5 cups water
    1 cup diced carrots
    1 cup diced celery
    1/4 cup chopped celery leaves
    2 bay leaves
    1/2 tsp salt
    1/4 tsp pepper


1. Soak the beans iin water to cover, overnight or by the quick soak method. Drain.

2. In a 3 qt. saucepan, heat the oil over medium high heat. Add the onions, green or red bellpeppers, and garlic. Cook, stirring, until softened, about 3 minutes.

3. Add the water and bring to a boil. Add the beans, carrots, celry, celery leaves, and bay leaves. Return to a boil, reduce heat and simmer 2 hours or until the beans are tender. Discard bay leaves. Stir in salt and pepper.

***Serve with salsa and tortilla chips.
