Ingredients

    1 cup uncooked short grain brown rice
    100 grams (2/3 cup) scrubbed, diced carrot
    75 grams (1 cup) diced mushrooms
    50 grams (1/3 cup) diced onion
    1/2 vegan vegetable bouillon cube
    2 cups water

Directions

Bring water to a boil with 1/2 cube bouillon
Add rice and diced vegetables, swirl around so they intermingle, return to simmer and cover.

Simmer until water is absorbed and rice is tender, about 25 minutes.
