My take on Ham and Beans, wonderful on a chilly day. My take on Ham and Beans, wonderful on a chilly day.
Number of Servings: 16

Ingredients

    3.25 Cups Dried Great Northern Beans (1 lb bag)
    2 cup Carrots, fresh shredded
    1 Onion, medium, diced
    1cup Celery, diced
    8 cup Chicken broth
    480 g Potato, diced (2 very large baking potatoes)
    8 oz Ham, diced

Directions

Quick soak dried beans per package directions (Bring to a boil in 8 cups water, remove from heat and let sit for 1 hour) Drain and rinse beans. In large pot, saute diced onions and celery with ham until onions are translucent. Return beans to pot along with broth, potatoes and carrots. Salt and pepper, as desired. Let simmer for several hours until beans and vegetables are cooked through. Tabasco sauce may be added , to taste.

Makes 16 1-cup servings
