    0.5 cup unsweetened applesauce
    3 tsp ener-g egg replacer + 4 T water (or 2 egg/egg equivalent)
    1 cup Ideal Brown Sweetener (or brown sugar)
    1 tsp vanilla
    1.5 cup whole wheat pastry flour (or flour of choice)
    1 tsp cinnamon
    0.25 tsp nutmeg
    0.5 tsp baking soda
    0.5 tsp salt
    1.5 cup grated apple (approx. 3 medium apples)


Prepare ener-g egg replacer by whisking 3 tsp ener-g egg powder with 4 T water in a small bowl. Whisk together applesauce, Ideal Brown Sweetener, vanilla, and ener-g egg replacer. Shift together (in another bowl) flour, cinnamon, nutmeg, baking soda, salt. Grate (or finely chop) 3 medium apples to get 1.5 cup grated apple. Mix dry ingredients into wet. Be careful not to over mix (will seem dry but the apples will add plenty of moisture). Fold grated apples into batter. Spoon batter in muffin tin (greased or use muffin liners). Baked for 20-25 minutes. Makes 12 muffins.
