    -3 cup Whole Wheat Pastry Flour
    -1 cup quick oats
    -2 tsp baking soda
    -0.5 tsp baking powder
    -2 tsp pumpkin pie spice
    -0.5 tsp salt
    -0.75 cup egg beaters (or 3 eggs)
    -15 oz canned pumpkin
    -2 cup Stevia In The Raw (or Sugar or Splenda)
    -1 cup Ideal Brown Sweetener (or brown sugar)
    -1 cup unsweetened original Almond Milk
    -0.25 cup canola or vegetable oil
    -0.25 cup unsweetened applesauce
    -1 serving low sugar Quaker Oats Maple and Brown Sugar (optional)


Preheat oven to 350 F. Mix flour, oats, baking soda/powder, pumpkin pie spice, salt. Using stand mixer beat egg beaters, pumpkin, sugars, milk, oil, applesauce. Beat in flour mixture into pumpkin mixture in batches. Makes 2 9x5 loaves or 24 muffins. Prepare pans of choice (grease, line muffin tin). Bake loaves for 60-70 minutes and/or muffins for 15-20 minutes.
