Ingredients

4 eggs
1 cup lowfat buttermilk
1 cup all purpose flour
1/2 tsp baking soda
dash salt
1 TBS sugar
cooking spray
Directions
1. Put griddle or frying pan on medium low to heat while preparing batter.
2. Separate eggs. Beat yolks and buttermilk together.
3. Mix dry ingredients in a separate bowl.
4. Combine wet and dry ingredients, minus the egg whites. Stir until just combined, don't overmix.
5. Beat egg whites until stiff but not dry.
6. Fold in egg whites, but don't over mix, so that there are clumps of the egg whites that haven't been incorporated to the batter.
7. Spray pan. Use 1/4 cup measure to drop pancakes into the pan. Cook 3 - 5 minutes on the first side, 2 - 4 on the second.
Makes 12 - 16, 4" pancakes. A serving size is 3 - 4 pancakes.
