Introduction

This is from the Bobs Red Mill 13 bean soup mix This is from the Bobs Red Mill 13 bean soup mix
Number of Servings: 4

Ingredients

    2 cups Bobs Red Mill 13 bean soup mix
    1 cup carrots, chopped
    1 cup onion, chopped
    2 tblsp olive oil
    16 oz lean ham steak
    1 smoked turkey thigh (for flavor only)
    2.5 quarts beef stock (low sodium preferred)

Directions

soak the beans for 1 hour and drain off the water. Saute onion and carrots in olive oil briefly. Add beans, stock and the turkey thigh. Bring to a boil, then reduce heat and simmer for 3.5 hours. Just before serving, heat a skillet over medium heat and cook the ham steak until heated through. Take off heat, cut into chunks and put into the soup. Serve and enjoy!
