    1 c. old-fashioned oatmeal
    1 c. boiling water
    .5 t. dried oregano
    1 t. crushed anise
    1 t. freshly-ground pepper
    1 T. chopped garlic
    2 eggs
    2.5 lb. 93% lean ground beef


Mix oatmeal and water and let set for 5 min. Add the rest of the ingredients in order and mix well. Roll into 64 meatballs and place on racks on two cookie sheets. Bake at 350 F. for 25 min. Makes 16 servings of 4 meatballs each. Individually freeze the meatballs you don't use and store in a heavy plastic bag in the freezer.
