    6 large chicken breast, cooked and ground up
    6 small stalks of celery
    1/2 large onion chopped
    4 T pickle relish
    4 T vidalia onion rfelish
    1 1/4 cup Fage Greek O% yogurt
    8 T Kraft Light Mayo with Olive Oil
    2 T Hidden Valley Ranch Seasoning
    1/4 C dijon mustard
    1/4 C low sodium chicken broth (i use the broth I make from cooking the chicken for moisture without lots of calories)


Cook chicken breast in seasoned water (I use low sodium chicken bouillon cube, garlic poweder, onion powder, garlic pepper)
Grind chicken up for chicken salad
Add the celery, onion, pickle relish, vidalia onion relish, yogurt, mayo, hidden valley ranch seasoning, chicken broth, dijon mustard, and seasonings to taste.
Mix until well blended and to consistency you like. You can add more broth if you don't want it dry. This is moist but not as most if you load it with mayo etc, so just a little more broth and/or yogurt helps moisten this up without a lot of calories.

Makes 32 1/4 cup servings
Great on sandwich rounds toasted.

I make this up and freeze part of it so when I need something in a hurry for lunches I can have it quick. Great to freeze in individual servings size and you can grab one out the door and it will be ready for lunch.
