Introduction

This is my Grandma Loretta's German Potato Salad recipe. It was a staple food as I grew up. It was very inexpensive to make and a great comfort food that would last at least two meals for the family. Ingredients

    10 potatoes, peeled and diced
    1 cup carrots, peeled and diced
    1 lb. bacon, raw and diced
    2 medium onions, diced
    6 stalks celery, diced
    1 1/2 cups vinegar
    1 1/2 cups sugar
    2 cups Water, cold
    3 T Salt
    2 T Pepper

Directions

Peel and dice potatoes and carrots. In large pot, boil till tender, drain and set aside. In same pot, fry chopped bacon till crisp, add onion and celery and cook till tender. Combine vinegar, sugar, starch and water; add to pot and boil till thick. Add potatoes and carrots, stir, and simmer for 10 minutes.
