Quick and easy banana walnut muffins. Quick and easy banana walnut muffins.
Number of Servings: 18


    3/4 c sugar
    1 1/2 c mashed bananas (3 large)
    1/2 c vegetable oil
    1/4 c unsweetened apple sauce
    2 large eggs
    2 c flour
    1/2 c chopped walnuts
    1 tsp baking soda
    2 tsp vanilla
    1/2 tsp baking powder
    1/2 tsp salt


Preheat oven to 325. Place muffin cup liners in pan. Mix sugar, bananas, oil, applesauce and eggs with a wooden spoon. Stir in remaining ingredients. Put 1/4 c of batter in to each muffin cup liner. Bake until wooden pick inserted in center come out clean - about 25 minutes.
