    2 pkgs jiffy corn muffin mix (dry, only the boxed mix)
    2 TBS butter or margarine ( i used with butter)
    1 md chopped onion
    1 C egg beaters (or 4 eggs)
    2 C chopped broccoli, cooked
    1 C lowfat cottage cheese
    1/4 C 1% milk


Preheat oven to 350. Grease a 13x9 dish. Put butter in pan, saute finely chopped onion. Do not brown, just get soft. Mix all ingredients. Pour into pan and bake 40-45 minutes.

This is straight from Jiffy's website. I used butter for a better taste, but subbed egg beaters for the eggs, lowfat cottage cheese for their regular, and used 1% milk, where they did not specify. The nutrition info is for that, if you use eggs or whole milk or whatever, they will change. I used what I had on hand.
