    16 oz ground lean turkey
    1 lg egg
    1/4 cup diced onion
    1/4 cup diced celery
    1/2 cup chopped fresh mushrooms
    1/2 cup frozen yellow corn
    1 tsp garlic powder
    1 tsp salt
    1 tsp black pepper
    1 can tomato soup
    1 second spray of Pam Original Cooking Spray


Except for the tomato soup & cooking spray, handmix all ingredients together well. Spray the bottom of a microwave-safe casserole dish with Pam. Place the meatloaf mixture in the dish and form into a loaf, making sure to maintain an even thickness. Pour tomato soup over the loaf, coating the top well. Cover with cling wrap (not foil). Microwave @ 50% for 10 minutes. Uncover meatloaf and baste if needed. Rotate the dish and microwave @ 75% for 10 more minutes. Check for doneness & cook a little longer if needed, but I find this is perfect and will not dry out the meatloaf. Enjoy!
