    1/4 c. fat free or 1% cottage cheese
    1 Tbsp skim milk
    1 tsp Dijon Mustard
    4 hard boiled egg whites
    1 hardboiled egg yolk
    2 Tbsp chopped scallions (green onion)
    2 Tbsp chopped celery
    Dash of curry powder (more or less to taste)
    1/4 tsp sea salt


Whip the cottage cheese and milk together until smooth in a medium-sized bowl. Blend remaining ingredients EXCEPT the egg whites into the cottage cheese mixture. Dice and add the egg whites to the cottage cheese mixture. Combine well and serve with Ezekiel bread or on salad greens.
