    2 cups Best of the Egg
    4 oz Jennie O Extra Lean Turkey ham - diced
    1 thick slice of sweet onion (walla walla or vidalia) - chopped
    2 large mushrooms - sliced or chopped
    1 teaspoon ground cumin
    1/2 tablespoon butter
    8 tablespoons medium salsa


saute the onions, ham, and mushrooms in a large frying pan. When cooked add the egg substitute and cumin, keep stiring until fully cooked and fluffy. Use a slotted spoon to serve as there will be liquid in the bottom of the pan. Serve with 2 tablespoons of salsa over each serving.
