Ingredients

    1 Tbsp Canola Oil
    1 artichoke heart, chopped/sliced
    1 tbsp. chopped onion
    1 tbsp. chopped green pepper
    2 small mushrooms, chopped
    2 jumbo black olives, sliced
    1/4 cup spinach
    1/4 cup egg substitute
    1/8 cup shredded cheddar cheese

Directions

Heat a small skillet with oil. Add onion, green pepper, mushrooms, olives, artichoke and spinach and cook until veggies are lightly cooked. Add egg substitute and cook until eggs are cooked (using a rubber spatula to raise eggs and allowing raw egg to run below cooked eggs), flip and continue cooking until eggs are done). Sprinkle cheese on top and fold over egg with veggies to make omelet. Serve
