Introduction

Egg, capocollo, red pepper and spinach egg muffins. Egg, capocollo, red pepper and spinach egg muffins.
Number of Servings: 12

Ingredients

    4 x Large Eggs
    9 Oz Egg Whites
    1 Tbsp Olive Oil
    3/4 Cup Tex Mex Shredded cheese (can use cheddar or pepperjack)
    1 x small onion chopped
    1/2 red bell pepper chopped
    1 x cup chopped baby spinach
    5 x slices Masto Capocollo Ham (can substitute anything similar with whatever's in the fridge)
    Salt & Pepper to taste
    Garlic to taste

Directions

Heat olive oil, garlic, onion pepper in pan until soft. Throw in ham and spinach to heat at end. Remove.

Beat eggs and egg white and distribute evenly in lightly oil-sprayed muffin tin (makes 12).

Sprinkle ham and vegetable mix and cheese evenly over each muffin tin and mix gently.

Bake at 375F for 30mins.
