Introduction

A yummy and filling breakfast (or any meal) with 2 servings of vegetables! A yummy and filling breakfast (or any meal) with 2 servings of vegetables!

Ingredients

    Cooking spray
    1 cup fresh baby spinach
    1 Egglands Best Extra Large Egg
    3 Egg whites
    1/2 cup canned diced tomatoes (basil, oregano, and garlic seasoned)
    1/4 cup crumbled feta

Directions

Spray skillet with nonfat cooking spray. Add fresh baby spinach. While spinach is cooking, separate 3 egg whites. When spinach begins to wilt, add 1 whole egg and 3 egg whites. After a few minutes scramble the eggs and add tomatoes. When eggs are almost completely cooked add feta and scramble again. Enjoy!
