Introduction

Ingredients

    3 medium-large sized potatoes (diced)

    8 oz baby carrots (cut in two)

    1 medium onion (diced)

    1/2 a bunch of asparagus (halve the stalks)

    1/2 a bunch of spinach (remove stems)

    1/2 a bunch of mustard greens (remove stems

    2 C green beans

    1/4 C green or yellow split peas

    1/3 C brown rice

    1 small head of red cabbage (cut in large pieces)

    2 large tomatoes(diced)

    4 oz mushrooms (diced in large pieces)

    apx 3 TB vegetable soup base

    salt and pepper to taste

Directions

In a large pot bring 10 cups of water to a boil.
Add rice, peas, carrots, cabbage and potatoes.
Bring to a low boil and continue cooking for 15 minutes.
Add soup base, spinach, mustard greens, tomatoes, mushrooms, onions, asparagus and green beans.
Continue to cook for another 15 minutes.

makes 8 1-1/2 cup servings
