Ingredients

    2 large eggs
    25g portabella mushrooms
    25g bresh broccoli, chopped into florets
    1tbsp flax seed
    50g red tomatoes, chopped or sliced (whichever you prefer)
    1tbsp salsa

Directions

one serving

saute mushrooms and broccoli for 2 or 3 minutes
add tomatoes and cook for a minute
add eggs and flax seed, scramble to your liking
i prefer to add salsa on eggs as garnish, my son prefers the salsa to be added with the flax seed and scrambled for a different flavor
