My mother would make this for dinner however it would be just as good for breakfast, too! My mother would make this for dinner however it would be just as good for breakfast, too!

Ingredients

    2 dashes, salt
    2 dashes, black pepper
    1 medium potato
    3 oz, beef (top sirloin preferred)
    1 large egg
    1/2 pat, unsalted butter

Directions

Season beef with 1 dash each of salt and pepper. Set aside for 10 min.
Bake potato in microwave (4-6 min) or in oven (15-20 min at 350 degrees) until done. Cut potato into bite sizes pieces, salt and pepper to taste. Set aside.
Broil top sirloin in oven. About halfway through cooking, surround beef with potatoes and cook until meat is done to your liking. Let sit one minute.
In small frying pan, melt butter, and fry egg over easy.
Place fried egg over beef. Serve immediately.
