Ingredients

    1 Large onion, minced
    1/2 lb lean beef stew meat, cut into 1/2 inch cubes
    3 carrots, diced
    3 celery stalks, diced
    1/2 lb small white mushrooms, stems trimmed, quartered
    1/4 lb shitake mushrooms, stem trimmed, quartered
    1 bay leaf
    3 Tablespoons minced Italian flat leaf parsley
    1 cup pearl barley
    1 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    6 cups chicken stock or broth (I use Kitchen Basics unsalted)
    2 cups water

Directions

1. Lightly spray a 4-to-6 quart slow cooker with vegetable oil cooking spray.

2. Place all the ingredients through pepper in the slow cooker. Slowly pour the broth and water over all and stir to combine.

3. Cover and cook on low for 5 to 7 hours, or until the meat, vegetables and barley are tender.

Makes 6 servings.
