    boneless, skinless chicken breast
    olive oil
    baby spinach leaves
    minestrone dry soup mix
    diced tomatoes
    slices, pitted black olives
    mozzarella cheese


1) reheat oven to 350 degrees.
2) In a large, nonstick skillet set over medium-high heat, brown the chicken in olive oil. Remove the chicken from the skillet and arrange in a single layer in a well-greased 8-inch baking dish.
3) Place the spinach evenly over the chicken.
4) Combine minestrone soup mix with the tomatoes, basil and black olives. spread this mixture evenly over top off the spinach.
5) Cover with foil and bake for 55 minutes. Bake 10-15 minutes more or until the cheese is bubbly.
