Number of Servings: 4


    4 green bell peppers
    1 lb lean ground beef
    2 cups of brown rice
    2 - 8oz cans of tomato sauce
    1 small onion (diced)
    3 cloves of garlic mined
    4 slices of lowfat cheese


Cut tops off green peppers and clean out the insides. Put in boiling water for 5 min.
Saute beef , onion and garlic until beef is browned. Drain beef mixture and add 1 and 1/2 cans of the tomato sauce and cooked rice.
Drain peppers and place in a 8x8 baking dish. Fill peppers with stuffing and pour the 1/2 can of tomato sauce over the four peppers and bake at 350 uncovered for 15 min. Top each pepper with a slice of cheese and bake for 5 more minutes.
