Introduction

Ingredients

    8 cups of chicken broth or vegetable broth
    2 cooked chicken breasts, shredded
    1 bag coleslaw mix
    Additional shredded carrots (if your mix doesn’t have enough), up to 1/2 cup
    1 tsp salt
    2 Tbs sugar substitute or equal amount of Stevia
    6 Tbs *plain* rice vinegar
    1/2 tsp pepper
    1/2 tsp cayenne pepper (or to taste)
    2 Tbs soy sauce or Bragg’s liquid amino’s

Directions

In a large pot, bring broth to boil. Add the chicken, coleslaw mix and shredded carrots. Cook until carrots are tender or cabbage is soft. Mix together remaining ingredients and add to pot. Mix well and heat through.

Makes 5 2cup servings.
