    3 roasted red peppers, chopped (canned OK)
    2 T EVOO
    12 shallots, chopped, or 1 c. red onion
    2-3 14.5-oz diced tomatoes (fire-roasted are best)
    6 garlic cloves, minced
    3/4 t red pepper
    1/2 c. cilantro
    1 t grated lemon peel
    2-2.5 lbs firm white fish (cod, halibut, grouper, etc.), cut into 1 inch pieces
    juice of 1 lemon
    8 oz clam juice
    1/2 c dry white wine (opt)
    paprika & cumin to taste (opt)


Heat EVOO in skillet over medium heat. Add shallots & saute until very soft (6 min). Add wine. Stir in peppers, tomatoes with juice, garlic, spices and clam juice. Stir in cilantro, lemon and lemon peel. Add fish and simmer til opaque (around 5 min). Season with salt & pepper.

Very adaptable--add vegetables, etc. as desired. Amount of liquid (tomatoes, clam juice, wine) up to you, depending on how thick you like it.

Makes 7-8 servings.
