Ingredients

    4 large Eggs (beaten)
    1 tsp Sea Salt
    1/4 tsp Black Pepper
    8 oz 1% Low Fat Cottage Cheese
    2 - 5 oz cans Chicken of the Sea Tuna in Water (drained)
    4 slices Nature's Pride Double Fiber Bread
    1/4 lb Low Fat Saltine Crackers (crushed)
    4 Tblsp Smart Balance Original Spread (divided)

Directions

Preheat oven to 350 degrees Faherenheit.

Break 4 eggs into large bowl, add salt & pepper, beat together. Add cottage cheese & mix in. Drain tuna thoroughly & empty into bowl. Mix all together. Tear bread into small pieces (no larger than 1" cubed) & mix in.

Grease bottom & sides of 2 qt covered casserole dish. Spoon mixture into casserole dish.

Crackers may be crushed by hand or rolling pin into pieces no larger than 1/4" cubed. Meanwhile, melt Smart Balance spread in glass measuring cup in microwave. Mix melted Smart Balance & crackers, then spread over tuna-cottage cheese mixture.

Put approximately 1 pint of water in 11" x 13" cake pan, place covered casserole dish in pan & place in oven - bake for 1 hour. Then bake uncovered for 30 minutes. Remove from oven and serve.
