I used to eat mini bagel pizzas for a snack. Now I eat these. I used to eat mini bagel pizzas for a snack. Now I eat these.

    12-15 slices pepperoni, any variety
    1-2 teaspoons spaghetti or pizza sauce
    1/2 teaspoon Parmesan or Romano cheese, finely shredded mozzarella would even work


Lay some paper towels onto a microwave safe plate. Arrange the pepperoni on top of paper towels in a single layer and not touching each other. Microwave 1 minute on HIGH. Lay more paper towels on top of pepperoni and press firmly to absorb the excess oil.

Dab a little sauce onto each, you don't need much. Sprinkle with cheese and microwave on HIGH 15-30 seconds or until cheese is melted.

You could also pop these in the oven to melt the cheese.

Garnish with a little fresh basil to dress them up a bit if you'd like.
