Introduction

Ingredients

    1/4 cup Honey
    1 tbsp cilantro
    Juice of 1 Lemon
    16 oz chicken breast (4 4-oz breasts)
    2 cups cooked rice
    2 cups green beans (fresh or frozen, NOT CANNED!)
    1 tbsp EVOO
    2 Garlic Cloves

Directions

Heat honey on low in a small sauce pan. When liquid-y, stir in cilantro and lemon juice. Place chicken breasts in oven safe dish. Pour honey mixture over the chicken and turn to coat. Refrigerate for 15 minutes. Heat oven to 350* and bake chicken for 30 minutes or until cooked through.

Meanwhile, Make 2 cups rice, 1 cup will be for leftovers!

Heat EVOO in large nonstick skillet. Add green beans and garlic and saute until beans are tender crisp.

Serve 1 chicken breast, with 1/2 cup rice and 1 cup green beans.
