    2 egg whites and 1 egg
    1 oz. of Reduced-fat Pepperjack cheese
    1/2 TBS of light sour cream
    2 mushrooms
    2 campari tomatoes on top

    Beat egg and egg whites in a bowl [add a little water]
    Pour into pan sprayed with Pam
    Cook SLOWLY--this is KEY to the taste of the omelet. Do not overcook before flipping.

    While that's cooking cut up mushrooms and microwave them in a bowl until soft.

    Flip your omelet in the pan and immediately remove from heat. Spread sour cream on eggs, top with mushrooms and cheese and flip. Cover with lid and allow the cheese to melt .
    Top with tomatoes and enjoy with a piece of whole grain toast.
