Introduction

Tasty and easy way to start the day with a pretty healthy whole grain and protein breakfast. Tasty and easy way to start the day with a pretty healthy whole grain and protein breakfast.
Number of Servings: 6

Ingredients

    1 Cup Dry Quinoa
    2 Medium Carrots Shredded
    2 Cups Water
    1 Cup Almond Milk
    1/4 Cup Brown Sugar
    1/4 Cup Dried Cherries
    1 Tbsp Vanilla
    Salt
    Cinnamon/Pumpkin Pie Spice


Directions

1. Rinse and drain Quinoa, while putting 2 cups filtered water to boil in a heavy bottomed pan.
2. Grate Carrots (either scrubbing well or peeling).
3. Add quinoa, salt, and carrots to boiling water. Cover and cook for 20 minutes, stirring occasioanally.
4. When Quinoa is done to your likeness( I like mine more well done for porridge than salads) take it off the heat and add cherries, sugar, vanilla, and spices.

Makes about 6 servings
