    2-1/2 c. oat flour, 1-2/3 cup sugar, 1-1/4 tsp baking soda, 1-1/2 tsp baking powder, 1 tsp salt, 2 very ripe bananas, 2/3 cup unsweetened applesauce, 2/3 cup 2% milk with 1/3 cup cottage cheese, 3 eggs


Combine dry ingredients except sugar.
Combine applesauce, sugar, bananas, eggs
Mix all together (dry, wet, milk and cottage cheese)

Drop by soup ladle into paper muffin cups - 36 - fill only 1/2 full. OR do 18 muffins and an 8 x 8 glass pan greased and floured. Bake 25 minutes at 350.
