From Tofurky brand 5 Grain Tempeh packageThis recipe tastes similar to tuna salad, but is made with tempeh instead! It's great for anyone who doesn't eat tuna, wants to add more whole grains to their diet, or just wants to experiment with tempeh! Ingredients

3 cups water
1 Tbsp. salt
8 oz. plain tempeh
1 tsp. Old Bay seasoning or curry powder
1/2 c. finely chopped celery
1/4 c. finely minced onion
juice from 1/2 lemon
1 tsp. dried dill weed
1/4 c. vegan or light mayo
1 1/2 tsp. dijon mustard
1 Tbsp. soy sauce
1/2 tsp. garlic powder
Directions
Makes 4 servings
Boil about 3 cups water in a small pot (enough to cover tempeh). Add the salt and place the whole tempeh cake in the boiling water. Reduce heat to medium and let tempeh simmer for about 20 min. Remove tempeh, pat it dry, and sprinkle one side with the Old Bay or curry. Let it sit for 10 min. and use a fork to break tempeh apart into small pieces. Add celery, onion, lemon juice, and dill to the tempeh and mix. In a separate bowl, wisk mayo, mustard, soy sauce, and garlic powder. Add to tempeh and mix well.
