Ingredients

Pancake Ingredients:
4 eggs
1 heaping cup flour
1 cup milk
1 cup water
1 tsp sugar
Apple Ingredients:
5 Granny Smith Apples
3 T Butter
Cinnamon Sugar Mixture (1 c sugar and 1 tsp cinnamon mix)
Directions
Night before cooking, blend all pancake ingredients and refrigerate overnight.
In the morning peel and core apples and cook in large pan with butter and cinnamon sugar. When all cooked set aside.
Heat iron skillet and briefly blend pancake mixture.
To cook pancakes, put in enough butter to lightly coat skillet. When bubbly, pour batter from blender, swirl pan around to coat bottom. Immediately put apples all over pancake and pour on a little batter and swirl pan again. When top of pancake is no longer wet looking , flip over. While it cooks, spread top side with melted butter and sprinkle cinnamon sugar mixture.
Since this side cooks fast don't leave in pan very long or it will burn. Take it out and put one plate. Continue cooking until batter is done, stacking pancakes on top of each other. Keep pancakes warm while cooking continues. Cut in wedges when finished.
