    210 grams chopped Asparagus, fresh
    1/2 cup PC Couscous - dry
    1 cup Blue Menu Chicken Broth - no salt added
    60 grams PC soft Goats Milk Cheese,
    3 slices Ziggy’s Light Swiss
    1 cup Naturegg Simply Egg Whites
    2 Omega 3 eggs


Add couscous to hot broth and let sit, covered until all liquid is absorbed.

Meanwhile, chop and steam asparagus for 3 minutes until still tender crisp. Plunge into cold water to stop cooking and drain. Set aside.

Press couscous into a 9 inch Pam sprayed pie dish.

Mix eggs and egg whites.

Chop swiss cheese into small pieces and line couscous crust with cheese. Top with egg mixture. Gentle add asparagus and broken bits of goat cheese.

Place in pre-heated 350 degree oven and bake for 45 minutes or until egg is set and just turning brown.

Cool slightly and cut into 8 equal servings
