Ingredients

    Drained canned salmon
    1 c. crackers
    1/2 chopped onion
    2 eggs (beaten)
    3 T. butter
    3 T. flour
    1/2- 1 c. milk

Directions

Open canned salmon/drain; set aside..
place crackers in food processor... pulse until crumbly; place in bowl w/ salmon; add chopped onions and eggs. In a sauce pan- melt butter; add flour a little at a time to emulsify. Add a little milk..stirring constantly - (may not need all the milk )..will make a nice white sauce. Pour slowly the white sauce over the salmon mixture... slowly stir until you have to get your hands in it... mix well... Heat olive oil in skillet over med/high heat.. drop salmon mixture by tablespoons into hot oil... cook 2-3 minutes on each side. Set on paper towels to soak up extra oil.
Makes 24 pieces...
