Ingredients

CAKE:
Banana, fresh, 1.5 cup, mashed
Lemon juice, 2 tsp
Flour, white, 3 cup
Baking Soda, 1.5 tsp
Salt, .25 tsp
Stick Margarine, 3/4 cup, softened
Granulated Sugar, 2 1/8 cup
Egg, fresh, 3 large
Vanilla Extract, 2 tsp
Buttermilk, lowfat, 1.5 cup
FROSTING:
Stick Margarine, 1/2 cup softened
Cream Cheese, Fat Free, 8 oz
Vanilla Extract, 1 tsp
Powdered Sugar, 3.5 cup, unsifted
1/2 cup chopped walnuts
Directions
Makes - 15 servings. Preheat oven to 275*.
Grease and flour a 9 X 13 pan
In a small bowl, mix banana and lemon juice, set aside
In a medium bowl, mix flour, soda and salt, set aside
In a large bowl, cream together the softened butter and the 2 1/8 cup sugar until fluffy
Beat in eggs one at a time, add vanilla
Beat in 1/3 of flour mixture followed by 1/3 of buttermilk, mix well, repeat until all are added.
Stir in banana mixture
Pour batter into prepared pan and bake for one hour or until toothpick inserted in center comes out clean.
Remove from oven and place directly into freezer on a towel as pan will be hot, for 45 minutes. This will make the cake very moist.
For frosting, cream softened butter and cream cheese together until smooth
Beat in vanilla.
Add powdered sugar unsing medium speed on mixer until add is added. and then on high speed until frosting is smooth.
Spread on cooled cake.
Sprinkle with chopped walnuts
