Ingredients

    14 manicotti shells
    26 oz jar pasta sauce (any flavor will do)
    1/4 cup water
    15 oz part-skim ricotta cheese
    1 cup reduced fat cottage cheese
    1/4 cup reduced fat grated parmesan cheese
    1 small can mushrooms
    1/4 cup frozen chopped spinach, thawed and drained
    1 Tbsp Italian seasonings
    1 cup shredded mozzarella cheese (optional)

Directions

Combine all ingredients except manicotti shells, pasta sauce, water and mozzarella cheese in a large bowl. Stir until well mixed. Add water to pasta sauce in separate bowl. Put 1/3 of sauce mixture in bottom of 13x9 baking dish that has been sprayed with nonstick spray. (I just pour 1/3 of the sauce in the bottom of the pan and then add the water into the jar. It saves dishes). Fill each manicotti shell with mixture until overflowing. If you don't overflow them, you'll have some of the filling left. Pour remaining sauce evenly over shells. Cover with aluminum foil and bake in 350 degree oven for 55 minutes. If desired, remove aluminum foil, top with 1 cup shredded mozzarella cheese and bake additional 10 minutes.
