Introduction

I found the original recipe on the "Eating Well" website at eatingwell.com/recipes/low_fat_granola_bar
s.html. I modified it by eliminating the raisins as I do not like raisins. If you need a little more protein in your diet, add 1/2 c peanut butter in place of the oil. I've also thought about substituting apple sauce for the oil, but haven't had the nerve to try it yet.

Ingredients

    2 large egg whites
    4 Tbs honey
    4 tsp canola oil
    2 tsp vanilla extract
    1 tsp ground cinnamon
    4 cups low fat granola

Directions

Whisk egg whites, honey, oil, vanilla, cinnamon. Add granola and mix well. Spray 9X13 pan with cooking spray. Press mixture into pan. It works well to use a wet rubber spatula. Bake at 325 for 20 - 25 minute or until light brown. Cut into 12 bars.
