Ingredients

    1 C dry lentils
    1 bay leaf
    1/4 tsp marjoram leaves
    1/4 tsp sage leaves
    1/4 tsp thyme Leaves
    1 tsp salt
    1/4 tsp pepper
    2 large onions chopped
    2 garlic cloves minced
    2 C canned tomatoes
    2 large carrots thinly sliced
    1/2 C celery thinly sliced
    1 green pepper chopped
    2 tbsp dry parsley
    31/2 oz shredded old cheddar cheese

Directions

Cover Lentils with 500 ml of water, bring to a boil and simmer 2 minutes. Remove from heat, cover and let stand one hour. Drain any excess liquid from lentils and discard. Combine lentils, seasoning, onions, garlic and tomatoes. Place in a baking dish, cover tightly with foil and bake in a 375 degree oven for 20 minutes. Uncover and add carrots, celery, green pepper and parsley. Bake, covered for 50 minutesmore or until vegetables are tender. Sprinkle cheese on top, bake uncovered for an additional 10 minutes until cheese melts.
