    1 lb. ground beef
    1 small onion, chopped
    2 T garlic, minced
    1 t olive oil
    2 t taco seasoning
    1 can diced tomatoes with chilies
    1 can green enchilada sauce
    1 cup lite Mexican blend cheese
    2T reduced fat sour cream
    5 Mission brand low carb flour tortillas


Preheat oven to 350 degrees. Prepare square glass baking pan by spraying with nonstick spray.
Heat 1 teaspoon olive oil in skillet; add 2/3 of the chopped onion. Cook onion until it sweats; add garlic to taste (I use a lot because I like it). Saute for 1 minute; add ground beef. Cook over medium-high heat until beef is done; drain. Add 2 teaspoons taco seasoning; blend. Add 1/4 cup of the cheese; blend. Add 1/4 cup enchilada sauce and the sour cream; blend. Use this filling to make 5 enchiladas; place in pan. Cover with remaining enchilada sauce; sprinkle remaining cheese and onions on top. If you have any filling left over, you can put that on top, too.

Bake at 350 for 30 minutes or until browned to your taste.
