    Whole Wheat Flour, 1 cup
    Unbleached All Purpose Flour, 3 cups
    Salt, 1 tsp
    Olive Oil, 1/4 cup
    Yogurt, plain, skim milk, 1/4 cup
    Water, 1.5 cup
    Potatoes, 2 medium
    Sweet potato, 4 medium
    Onions, raw, 2 medium - finely chopped
    Garlic, 2 cloves - finely chopped
    Ginger Root, 1/4 cup, finely chopped
    Small Green Chili Peppers or Jalapenos, 4 - finely chopped
    Salt, 1&1/2 tsp
    Cumin, 1&1/2 tsp
    Garam Masala, 1/4 tsp
    Turmeric, ground, 1/4 tsp
    Cilantro, raw, 1/4 cup - chopped
    Canola Oil Cooking Spray


Put Parathta ingredients into a bowl, and knead for about 10 minutes, adding enough water to form a firm yet flexible dough. Cover and let rest for 45 minutes.
In the meantime, boil the potatoes and sweet potatoes, and mash them.
Spray a skillet with the Canola Oil, and saute the onions, ginger and garlic for about two minutes. Add the peppers, then the spices and mashed potatoes. If the mixture is too thick, you might have to add some water to the mixture to to make it easier to stir.
Divide the dough into 16 pieces. Using a rolling pin on a flour - dusted surface, roll the pieces of dough into circles. Spread filling on the bottom half of each circle. Wet the outer edge, then fold the top half over the bottom, pressing the edges together.
Cook pirathas over medium-low heat, using Canola Oil Cooking Spray, turning frequently, until they are golden brown, about 5 minutes per piratha.
