Ingredients

Butter
1 medium Red onion, sliced
1 large zucchini, sliced
2 cloves garlic, minced
2 cups mushrooms, sliced
1 cup baby spinach
3/4 cup feta cheese
8 eggs
1/4 cup half and half
Directions
1. Melt butter in a pan over medium heat.
2. Add onions, zucchini, garlic, and mushrooms and saute until soft, about 10 minutes.
3. While the vegetables are cooking, combine the eggs and the half and half. Whisk together.
4. Add the spinach and let wilt.
5. Add the cheese and mix in with the vegetables.
6. Once the feta is mixed in, add the egg mixture. Do not stir, but use the back of a spoon to smooth it out and make sure the mixture is even in the pan.
7. Cook on medium heat on the stove for about 10 minutes, or until the sides start to firm up.
8. Continue in the oven for 10 to 15 minutes at 300 degrees until the frittata is done (it will set in the middle).
