Ingredients

    1 Tbs coconut oil
    1T chopped onion
    1T chopped green onion
    2 large eggs
    1Tbsp of Salsa or to taste

Directions

Heat coconut oil on medium or medium hot.
Add onion and pepper, chopped. stir til cooked

If you like your onion browned you can add it first and hold the green pepper back for a minute cause the pepper can get bitter when it's browned.

After two or three minutes the veg should be cooked, then you can add your two eggs.

Scramble lightly til cooked through and turn out on your plate. Top with Salsa and enjoy.
