Ingredients

    1 can Sweet Corn
    1 can Chicken Broth
    1 can Diced Tomatoes with Green Chilis
    1 can Chicken Breast, drained
    Salt and Pepper to taste
    1 cup coarsely crumbled tortilla chips (optional)

Directions

In medium sauce pan bring, broth tomatoes with chilis to a boil. stir in corn; reduce heat simmer 2 minutes. Add chicken and simmer 1 minute until heated through. Salt and Pepper totaste. Spoon into serving bowl with tortilla chips.

I use Instant mashed potatoes instead of tortilla chips. My husband prefers it that way, plus it is 124 fewer calories with the potates than with the chips!

Makes 4 1.25 cup servings @ 142 calories without chips, potatoes or noodles
